01 spoon (soup) of sugar;
01 margarine cooking tablet (100 g);
01 teacup of corn starch;
01 teacup of milk;
02 teaspoons of salt;
02 tablets yeast (30 g);
04 teacups of flour;
200 grams of sausage pepperoni, grated;
200 grams of grated mozzarella cheese;
200 grams of grated provolone cheese;
300 grams of tomato sauce.
In a large bowl, crumble the yeast tablets, add the sugar and blend until liquid. Heat the milk until lukewarm and add the yeast mixture. Add half a cup of (tea) of flour. Mix, cover and let rise for 15 minutes. Add margarine, eggs, corn starch and salt. Mix with a spoon until pasty. Add gradually the remaining flour and knead until you release the hands. Flour a dry surface, place the dough and knead until smooth. Cover and let rise for 01 hours or until doubled in volume. In a bowl, mix the sausage and provolone cheese. Grease two large pizza pans (35 cm diameter). Divide dough into portions 100. Hand filling between the pieces of dough and shape in the form of pellets. Arrange 50 balls in one of the reserved baking sheets, placing one beside the other. Repeat with remaining balls on another baking sheet aside. Cover and let rise for 30 minutes or until doubled in volume. Preheat oven at medium temperature (180° C). Brush with egg yolk and bake for 25 minutes or until golden. Remove from oven, cover with sauce and sprinkle mozzarella. Return to oven for another 10 minutes or until cheese is melted. Serve at once.
